The former Victoria train station along Main Street is in the process of being converted to an Italian restaurant, the owner of the restaurant confirmed Thursday. Sophia Solar said the restaurant will be called Simona’s Italian Restaurant, serving pasta, hoagies, chicken, wraps and salads. Solar is set to run the restaurant with Olmar, her husband. As of now Solar said she and staff members are working to bring building to code, and hope for the restaurant to open by the end of November or December. “We want to thank Victoria for the opportunity for me to open this restaurant,” Solar said. A representative of the Town of Victoria confirmed that the owners have a business license for the restaurant.
